    My opinion is that smoking any poultry white meat is an exercise in futility. Regardless of the meat quality.

    Ya I had been reading up on it. seems to becoming more and more common. I'm one of those weird texture people (my daughter is the same way) and if the texture is off I just can't eat it. I think Saturday we are going to go over to the local farmer and see about some meat from them to try out. Wife also wants to do some u-pick for veggies.

    You don't get a ton out of it but it does impart the smoked flavor of wood into it (albeit a lighter flavor). I've been doing this way for years now.

    Not trying to start any trouble here but it's been proven that shoving a beer up a chicken's ass actually slows down the cooking of the bird in the middle.

    If you haven't already tried it, give spatchcocking a go. Instead of trying to cook a ball, you're cooking a flat bird (chicken turkey) and not only does it cook faster, but the thighs and the breasts cook more evenly. This way the breasts don't dry out while trying to get the thighs to temp.

    I have seen that (not the brand) before… was intrigued. Let us know your thoughts. There were a few versions. Yea, it’s a traditional peace symbol that was misappropriated. Still used in many countries throughout Asia.

    I'm open for any creative uses!

    Fun story, my wife ordered a bunch of surplus fabric from somewhere in Asia. A large percentage of it had this "good luck" pattern on it. Needless to say, she couldn't use it to make any clothes that could be worn in the west.....

    Flew down to Austin for a day trip and to visit some friends. We checked out the Japanese Southern BBQ concept by Aaron Franklin and Tyson Cole (Loro).

    I was severely underwhelmed. Each main is sold separately of sides and the dish concepts seemed incomplete. The bavette was chewy/rubbery and the pork was not rendered enough. Every sauce with every dish was aggressively sweet.

    Womp womp.

    The pickles, made in house or purchased from a supplier, were excellent (little bit of heat, too).
