    When I lived in Jamaica, Walkers Wood, now owned by Grace, was the go to commercial Jerk sauce. I have made my own a few times (it is a scallion based paste). Smoking the meat over allspice leaves and branches is the key to being authentic.

    Funny story, one of the better jerk places in Kingston had separate cashiers for pork and for chicken, if you wanted both, you had to line up twice. One cashier had a large sign on the wall behind her.

    "PORK CASHIER HERE".

    So wegmans has the Walkers...and I like the wegmans one better, it has more kick and is 'thicker'
    But I have mixed the 2 and that was THE best combo...
    I think if they had the Walkers HOT and SPICY it would be closer to the wegmans regular

    Just some wild Alaskan salmon my buddy caught. Cured in 50/50 kosher salt/brown sugar and little pepper. Smoked with apple/cherry wood for 2 hours at 225* till 135*. Basted with birch syrup every 15 min. Best salmon you ever had. Last year he gave me about 3 times as much. Made salmon salad sandwiches. Was incredible.

    I've always used my gas grill and electric smoker. Buddy at work made some burgers on a charcoal grill and I was blown away. Totally forgot the flavor charcoal adds. Literally went and bought a Weber kettle on marketplace the weekend after for $50. Wings rubbed with Kinders brown sugar, B&B briquettes, apple wood chunks and then tossed in Sweet Baby Rays buffalo wing sauce. Freaking amazing.

    Did 4 1.5" thick ribeyes tonight. Low and slow with apple wood and reverse sear. Wife was upset we were out of steak sauce and I always tell her it's not needed. She was actually impressed it was so good with just salp/pepper/garlic.

    Think I'm going to go and pick up a pork butt and some ribs this evening and smoke one or both this weekend. Might try out the Faygo Rock & Rye BBQ sauce I've been wanting to make.

    I have a Weber Genesis EP-330, Weber Smokey Mountain 18.5....and a Weber Kettle Premium 22" and there's nothing I can do on the kettle...If I had to only have one grill it would be the kettle...

    Pork belly on the kettle over charcoal, hickory and apple wood. 2/3 are cubed for PBBE and 1/3 will be shredded for sandwiches. The nephews got me some Brock Lesnar rub since they’re wrestling fans and I gotta admit, the stuff is pretty good lol. Wish I’d started sooner, I’m hungry.
