    Beat me to it.

    On a copy and past note one of my favorites from our local hangout.
    Saucy Shrimp

    • 2 oz. Butter
    • 1 tbsp. garlic, minced
    • 1 ea. green onion
    • 10 ea. Kalamata olives, ½ pieces
    • 2 tbsp. sundried tomatoes, julienne
    • 3 oz. shrimp (small count)
    • 3 oz. bay scallops
    • 2 tbsp. lemon juice
    • ¼ cup clam broth
    • 3 tbsp. Feta cheese, crumbles
    • 2 tbsp. chopped parsley
    • For service: crusty bread, as needed
    Directions


    1. Heat butter in a sauté pan. Add garlic and green onions and sauté until the aroma fills the air.
    2. Add Kalamata olives and sundried tomatoes – cook for 30 seconds.
    3. Add shrimp and scallops, salt & pepper and sauté until firm – do not overcook.
    4. Add lemon juice, clam juice and feta cheese – bring to a simmer.
    5. Pour into heated serving dish.
    6. Sprinkle with chopped parsley.
    7. Serve with crusty bread.

    I try to get the majority of my carbs in the morning, then a little at lunch, and try to avoid them at night. Grilled chicken and brown rice majority of the time, with greenbeans and hot sauce!

    Steak and fish are all good too, key is just balancing the proteins, carbs, and good fats.

    some constructive criticism? your pot roast will be a BILLION times better if you do some cooking prior to dropping everything into the slow cooker. brown all the meat and veggies. that malliard thing is amazing to flavor.

    i'll post up some recipes tonight. for health, i have pretty much cut out fast food, and most restuarants. my wife thinks i cook better anyways..and it is cheaper.

    A regular in my household is...

    green curry with chicken

    chix breast
    coconut milk
    green curry paste (which ever brand u prefer)
    green bell peppers
    thai basil
    bamboo shoots
    white pepper
    brown sugar
    salt to taste
    fish sauce

    And a nice side of your favorite rice.

    Sometimes I puree additional Serrano chiles, garlic, ginger and scallions when mixing it up or use a red paste instead.

    MurderedOut/Pogiboy, i'm gonna try that pot roast when i get home, it looks awesome and sounds pretty easy to make!

    Thanks for the tips guys.

    I've always been a fan of grilled fish.
    Cut it open, lemon slices inside and on top, some olive oil, your favorite seasoning, grill it up for a while til its cooked through and DIG IN.
    It cooks fast and stays really moist.

    damn i'm hungry....

    thai green papaya salad. spicy, salty, sour..it has all the greatest hits.
    sear ahi tuna, over a salad
    beans cooked with a leftover hambone.

    damn i'm good.

    Yah, my girlfriend showed me how to cook the brown rice with less water than recommnded, and in the rice cooker.

    It comes out a little hard, but (to me) tastes way way less bad than any other way of cooking it i have had to experience

    i'm chinese, so i eat rice. big surprise.

    anyways, i eat brown rice exclusively now..well 80%. korean brown rice is fantastic. blindfolded, i bet you couldnt tell. the rice is a med grain, and it cooks up fluffy like white rice.

    everything in moderation, really. i rarely eat out anymore. health and money reasons.
