    Happy Monday Morning Y'all, :wave:

    I couldn't stop thinking about the carrot cake and thought I'd share this if anyone is interested. It's a family recipe that's probably 70+ years old and was stolen er um borrowed from a cruise ship no less. ;)

    1 cup raisins
    2 cups shredded/grated carrots (food processor works best for this)
    1/2 cup walnuts
    1 8oz can crushed dole pineapple (drained)

    2 cups flour
    2 cups sugar
    1 1/2 teaspoons baking soda
    2 teaspoons baking powder (clabber girl)
    2 teaspoons cinnamon
    1 teaspoon salt

    4 eggs
    1 1/2 cups salad oil (canola oil)

    Beat eggs, sugar and canola oil in a large bowl. In a separate bowl combine all dry ingredients then mix in raisins, carrots and pineapple. Walnuts too if you prefer. Combine all ingredients and mix.

    Pour into a greased and floured 9x13 pan. Bake at 350 for 40-45 minutes. Done when toothpick comes out clean. Each cake seems to vary, so keep an eye on it around the 40 minute mark. The top of the cake should look dark, but not burnt. Let cool before frosting. Keep refrigerated when done.

    Homemade cream cheese frosting is about 1 to 1 1/2 bricks of Philadelphia cream cheese, a bunch of powered sugar to taste and a very small splash of milk and vanilla extract. I prefer Costco's vanilla extract.

    It tastes best the second day after it sets overnight. Also, the raisins always seem sink towards the bottom of the cake, but that's normal.

    I usually leave out the walnuts and do 1 1/2 cups or so of the carrots, raisins and crushed pineapple, but everything else is followed according to the original.

    Coat the raisins with some of the flour. It’ll help keep them suspended in the cake rather than sinking to the bottom.

    I see this around here as well. It belonged to someone in the family and the memories they have attached to it they don't want to sell it.

    Then on the other side of that, I have a tractor I bought from a guy his dad bought new in 1970. I had been talking to him about buying it for a while and about 2 months after his dad passed he told me to come talk to him and sold it to me for less than I offered.

    Yep, see stuff all time here. Last one ive seen was a 68 or 69 camaro sitting under a metal shed. Hasnt moved in time ive been here.

    Sad thing is you ask about them and most time they either dont want to sell or say they are going to fix it up someday:rolleyes::rolleyes:
