While idling in drive turned my wheel and it felt like my truck wanted to shut off.

While in drive and waiting in a drive thru I turned my wheel and there was a hesitation and it felt like my truck wanted to shut off? What could this be?

 

load from the power steering pump on the engine, a slight dip in RPM's is normal,,, just like when the A/C compressor engages.

 

This most likely. You can also notice the power steering using power if you crank the wheel hard over and hold it, vs holding the wheel near but not at maximum wheel turn.
