What is this knob on back of my drums?

    I can turn it left and right but doing so doesn’t seem to make it tighter or looser…just kind turns. If it adjusts the brakes at all, how does it work? I’m having a bear of a time getting my drum covers off (yes parking brake is off) and I wonder if this will help in any way?

    I am pretty sure that is the bleeder valve, with some type of cover. Mine didn't come from factory with that. Could be aftermarket, or something new. Mine just had a little rubber plug, to keep dirt from collecting inside the valve. Removing the drum covers could be tough depending on the lip created due to wear. There should be elongated plugs in the back where you stick a tool to push back the adjuster, then use another tool to turn it in to loosen one of the shoes. Look for a utube video on the procedure.

    looks like a bleeder valve that you were turning a rubber protective nipple boot on

    That’s just a dust cover for the wheel cylinder bleeder screw.

    There is another rubber plug right below the brake wheel cylinder, that pops out, allowing access to the adjustment star for the auto adjust mechanism (circled in red belo). Pop that cover off and rotate it (i don’t remember which way, but with enough finageling, it’ll be apparent) and the drum should slide right off.

    Usually what occurs is as the brake shoes wear, the brake drum also wears and there is a small lip that is created on the inside edge of the drum that the brake shoes can get caught on, making it difficult to remove the brake drum.

    Adjusting the internal auto adjust mechanism the right way pulls the shoes in, allowing the drum to slide off.

    It's the bleeder for the brakes. If you plan to bleed the brakes I'd put plenty of rust penetrant on it and then before you attempt to turn it, tap it lightly with a hammer.
