This problem started with the battery dying on me about twice. I jumped it with my portable battery those two times and it was fine for about 3 months. Then one day it dies again, I jump it and when it turns on my dash is completely off except for the check engine light. The odometer, speedometer, turn signals, and everything else on the dash does not turn on except the check engine and my apple car play. The AC works fine but its lights turn off once I turn on the headlights. Checked the battery and everything checked out, I have a light bar connected to the battery but it was stolen, but it’s still taking power— I don’t know if that has anything to do with it. Appreciate the help!

Have you scanned it for codes?
The engine light means, you have stored codes.

We can only guess until we know the codes.

Did you look for a blown fuse?

Light was was stolen you said? I’m assuming they didn’t disconnect everything neatly as when you installed it. I’d remove all the light bar wiring, relay, and switch and start there. Something is throwing a short to something.
