Have the eibach stage 1 kit on order and I know the you need to either do AAL/ New leaf pack or add blocks in rear to get lift. So I ordered a 2” lift block for the rear but I’m seeing the rear shock is only rated for a 1.5” block or lift. It’s more on road driven than off road, so would the 2” be ok? I still want to keep some rake as I pull my jetski a lot during the summer.

You can squeeze 2" out of them. Same with Bilstein 5100's too.

Would I be best to just do the blocks then?

An icon add a leaf would be better than a block.

You may need a spacer for the brake hoses, where they connect to the axle on driver side, if setup is similar to second gen.

No spacers needed for the main brake lines for a 2" lift. The icon add a leaf can get you closer to 2" of lift if you leave the overload leaf in. But I would trim about 3" off the front of the overload leaf so that the rivet is not making contact with the icon pack. A grinder is a must for the install.

The emergency brake line - I would just cut that bracket off completely. This way your E-line is not stretching out at full droop. You will be less likely to have the E-brake locking up when its cold out too. 72k on my tacoma and lots of other installs and never had any issues.
