So I got OME Springs that I wanted to put on my Bilsteins. On the label of the coils it says 887x. Is that like a variation of the 887 spring, if so how is it different from it? I legit can’t find any information online about it.

That's just the newest version of that spring. New 885s, 887s, etc all read with an x at the end of the label. The update happened in... ~2016, and everything moving forward carries that moniker.
