What's the deal with all the variation in U bolt diameter and U bolt flip kit top place thickness?

I see U bolts offered in 1/2 and 9/16, and I see various flip kits with top plates ranging from 1/4" to 1/2". What's actually needed, what's too small, and what's overkill?

    Installing Dakar leaf pack.
