    That's what I was thinking, try a small bag to see how they are. I have my doubts. Maybe after the move I will pick up a charcoal grill also.

    They'll take on smoke but the majority is cleared already. I smoke into the stall and then go into the oven overnight (smoke from about 7/8PM until 10/11ish, then oven at 225 overnight until 5, I usually set an alarm for 5/6 to check it). Then pull it, wrap it, throw it in a cooler. Shred it at lunch. Has worked well for me about a dozen times :D

    But I'm weird, I don't care for/about bark.

    Use the tooth pick to probe it like a brisket or pork butt?

    Or to see if it comes out clean like when cooking a cake :D

    Just like probing a brisket. Sink in easily between ribs. Check often towards the end. If you like tug off the bone texture a bit of resistance is ok. Like bend test if you don't want falling off the bone.

    Lot's of ways to get the job done. I smoke with charcoal and add smoke wood of choice. Pork butts I like the bark an don't wrap. I go for the meteor approach.

    Agree! Went from pellet to Weber - never looked back. I'm looking at a fan controller, but it's not really necessary. Stupid name, but great reviews. Pellet smoker didn't generate much smoke so I got one of those smoke tubes. Helped a little, but there wasn't enough air for it to generate enough smoke.

    After a 1.5 hour maiden voyage, yes I'm smoking pork shoulder tonight!

    As I sleep, I'm going to smoke this 7.8 lb pork butt. Fingers crossed.
