    Flap steak and grilled broccolini. I’m on a mission to nail down the perfect chimichurri.

    Salted the steak last night and popped it with garlic and pepper a few minutes before fire. Broccolini got olive oil and SPG before the fire, then lemon/oregano butter to finish.

    Red wine vinegar
    Olive oil

    Proportions are where I’m at. I think I’m at 2:1 parsley to oregano, equal parts garlic and chili :)1/2 original ratio), SP to taste.

    EVOO and RWV: 3:1, dependent on the herb amounts.

    I know that’s less than helpful, but my brain be doing brain stuff. The chili is killing me because I want Thai chilis, but I can’t find them anywhere. I resorted to growing my own… if they pan out.

    There's an Asian Market near me that I can get the Thai Chilies in bulk for cheap.. I've had luck growing all sorts of peppers from seeds. Let me know how yours turn out.
