Is the A/C light flashing when this happens?

Was it flashing prior to everything being replaced?

Have you checked circuit integrity of the Lock Sensor wire between the sensor and the A/C Amplifier?

It isn't sensing the proper RPM of the Compressor when the clutch is engaged. Since you have replaced the compressor and AC Amplifier etc... As stated above it is probably the sensor wiring, plugs etc or a defective sensor.
