    I wouldn't even attempt trying to recreate something like that here. I've had a few customers ask if I made those or some other regional type and it's enough to have my spin on the region I'm in. I think the biggest complaint is mine aren't like they are in Tucson. I say no they aren't because there's different sources between here and there. Especially the breads. There's a decent following here for what I do. To do a Chicago? I won't even try. We're not going to source the meat anywhere near what they do. And to bring that taste here could never be done correctly.

    I watch the trucks that try something "different"...whatever it is. They never seem to take off because there's no real demand. Usually within the year or season, they're closed.

    I've also seen a couple that started in a trailer and have moved in to brick and mortar. One guy started with a pizza trailer and now has 2 brick and mortars. Now I don’t know how authentic his food is, he sources at the same basic places we all do, but he makes a good enough product to be successful.

    One of my friends has used that mantra for pre shot routine for years- see bird shoot bird. Mine has changed over the years but dropped down to just see bird. He recently switched to Laser Focus (LF). Then on Monday sent this in our group text. I am the one that suggested writing on the glove :) I thought you might get a kick out of it

    I like brats at home with grilled onion. Not something I'd add for business. I do have kraut though. There's way too many varieties of brats.

    I need a new clock in the bedroom with larger numbers. This is twice in a week that I thought 2:25 was 5:25. At least I will sleep well tonight. And pretty sure I will make the club and hotel by noon now LOL.

    I live in bratville. Meat lockers usually have at least 100 flavors of brats in Mn. and Wi. but to me they all smell like silage on the farm. Good chance it will be the only item available for lunch for the next 3 days. Simmered in beer first then crisped on the grill with a crockpot of sauerkraut available. The better gun clubs will also have a crockpot of fried onions with chopped bacon too.

    Brats and kraut really is a mustard only thing, at least to me. Not sure I've even seen ketchup available where brats are the main course.

    But I'd prefer an Italian sausage with fried onions and peppers on a white bread bun or better yet potato bread bun. With Mayo....

    I'd hit that any day well done! I have been slacking this year and need to smoke some Atomic Buffalo Turds and fatties after I get back. No not those fatties these
