Mini bowties with artichoke sauce

• 1 can artichoke hearts in water, drained
• 1 can ish of vegetable broth (I used "better than boullion" for this one)
• A couple cloves of garlic, cooked however you want
  
• Some salt
  
• Vitamix, blend the snot out of it.

Put it over pasta - so good. I added some thighs diced and sauteed in cajun seasoning, and some andoullie sausage. Started with the idea of "pastalaya" and then morphed from there.

Next time, I will do the same thing, but do it in an 8x8 instead of a 9x13, and no ranch sprinkle on top. Overall, I was pleasantly surprised by the cornbread.

Eyes were bigger than my stomach, only ate 1 of the 3 slices of cornbread there

 

I’ve been thinking about “good fats” lately. So yesterday’s dinner was a sardine sandwich.

Homemade (gluten free) everything bagels and smoked salmon.

 

Fried chicken liver and green tomatoes. Sauce is just mayo, soy sauce and a drop of butt pucker xx hot sauce

 

There’s a place I pass on very rare occasion that has the best fried liver and gizzards I’ve ever had. I get an order of each and pass into rapture as I drive away.

 

I brined these in pickle juice and it really mellowed out nearly all of the livery taste. I may have went overboard on the msg cuz I can't quinch my thirst at the moment lol

 

Finishing up the bagels from the other day.

Scallion cream cheese, smokey chipotle, egg, bacon, brisket, sharp cheddar.

 

Some do the milk/cream marinate method for reducing the offal that throws some off.

 

Buttermilk soak for livers. It gets rid of that iron taste.

 

Damn son! That looks amazing. I not only want to eat it, I want to roll around on it for a minute or two before I do!

 

Thanks! I rolled around for a few hours afterward because walking was out of the question.

 

No pics, sorry… lamb leg sous vide for 4 hours@165 in marinade seasonings and finished on grill. Sides of butter beans and saffron rice. It was a hit and nothing remains.

Just spicy enough to let you know it's there. Ate one plain and one on keto bread. Eating both got boring towards the end and I ended up tossing the last 1/4 of my sandwich. I'm going to have to figure out a better way to prepare it.

 

Topped with bacon and a ground beef patty.
