So far it looks like battery systems like jackery and eco flow delta require a pure sinewave inverter and won't charge with the ones in the 3rd gen Tacoma.

Am I best off just getting a second battery and running a dedicated inverter in the bed?

Highly doubt it is because of needing a pure sine inverter but let's see where this takes us.

So if I am understanding this correctly, you are considering getting a 2nd battery in order to run a pure sinewave inverter in order to charge a Jackery/EcoFlow? A battery to charge another battery? If that is the idea then...no, just no...

Why not charge the Jackery/EcoFlow via 12V outlet (cigarette lighter type plug)? I'm guessing the answer is "it charges too slow."

OK so now you are trying to charge it from the Tacoma's inverter. OEM inverter has 400W output when the truck is not driving, then it drops to 100W when you start driving. Based on a quick check of the charger specs online for most models you are going to need more than 150W to run the AC charger. It's not a pure sine problem here, it's a wattage output issue with the OEM inverter.

There are options to make the 3rd gen inverter 400W anytime but require modification. Start here: https://www.tacomaworld.com/threads/updated-2021-3rd-gen-tacoma-anytime-400w-inverter-mod.799125/

I have the 400w anytime mod but I've read that even then the outlet can't be used to charge jackery or eco flows as it's a modified sine wave. The 12v input idea sounds a lot more obtainable, especially since I've already been considering running a 12v circuit back there for an outlet, air compressor and a few other things.
