So I might be paranoid. I might just be over thinking. I have a solar panel 100w connected to a MPPT controller which came with a set of accessory wires to be able to run , for an example, a fridge. So I ran the accessory wires from the MPPT controller to the bed of my truck and used an Anderson connector mounted to the bedside cubby hole door. From there the fridge connects and turns on. My question is.. do I need a cut off switch on that Anderson connector when I don't have my fridge hooked up or is it okay to just let it be? I assume with nothing pulling power it wouldn't drain the battery.

If I'm imagining the same thing you're describing, a cutoff would be overkill. Unplugging the appliance is your cutoff.

On the controller side, however, I would make sure that any connection to the truck is fused and protected from the unlikely short.
