Hope to shed some light on this. I don't have all the information but will try to provide insight where I can. The issues that you are looking at are by design. It is a safety feature (insert rolling eyes) because you are "moving" so it looks at the artwork as a distraction. It is "smart enough" to keep the artwork on until you hit a certain speed and then it realizes that you are actually driving and then disables the artwork on the screen. I have a 15 Corolla and a 16 Corolla before that and didn't have this issue but when I needed to rent a car and got a 23 Corolla I ran into many issues with this.

Years ago I was getting a head unit installed in my car that would play DVDs in it cause I had DVD concerts where I wanted to listen to the audio and found out that there was a law (at least in my state) where if someone was installing the head unit (retail wise) they were required to attach a wire to the parking brake (if I remember correctly) so when you had the car out of park it would disable the video. Not attaching that cable allowed me to have the video playing while driving (which really didn't matter but made it at least manageable while using the remote or selecting a menu. Now with yours, this is probably built into the software of the Toyota head unit and I have not found any custom firmware that is out there for it so you are at the mercy of the system software. If part of your navigation has been removed, the only way that I am really aware that you would have a chance of using your device for selecting music would just be through your own app via bluetooth so it doesn't allow the toyota infotainment software to have as far of a reach as it would like in terms of preventative security measures.

    Hope this helps.
