Just had the oil and filter changed in my 2014 V6 4x4, with a little over 80K miles. As expected, they presented me with a list of things that they think need to be replaced, inculding front struts and rear shocks. I've searched Tacomaworld many times trying to find info on how to determine whether the struts or shocks need to be replaced, with no luck. I did the old-school method of pushing down on then releasing the corner of a vehicle, and if there's more than one or two rebounds, the shock is probably failing.

I did the bounce test, only bounced once on each corner. There are no fluid leaks as best I can tell.

I don't wheel the truck at all, nor drive crazy on paved roads. Are there any other checks I should make to determine whether struts or shocks are bad?

Small lift, slightly oversized tires, well...
At 80k, they are due, but if the truck still rides well and they aren't leaking, you can wait.

Unless they're using OEM, Bilstein or something expensive like King or Icon, whatever they install will likely be a downgrade from your current shocks. They're probably fine

Shops love to recommend stuff like that and they'll hide behind "the mileage" as the reason for replacing
