    Yes smoker. I freeze the roast, after cutting into manageable chunks for my slicer. Not rock hard but firmed up, it just slices more uniform. Marinate in Dales overnight after slicing it about 3/16”. The add spices after I lay it out on the racks. I’m now doing like ten flavors, my original with a bit of bite, lemon pepper, smoky bacon, savory, garlic, brown sugar bourbon, BBQ, Voo Doo, bourbon peach, jalapeño and a sweet heat. I take orders from my regulars and accommodate them, and do not make every flavor on every smoke. I mail it out to a few friends, and have actually shipped to Australia several times. Mostly face to face between mine and my wife’s co workers.

    Be careful. I smoked peanut skins in Junior High. Myth busted. They do not get you high and everything tastes like a donkey ass for about 2 days.

    I have, but not on a smoker. I just didn’t like all the fat that beaded up on the surface of the jerky. I would take it off and pat it all with a paper towel, that got old quick! When I tried lean muscle jerky I actually gave my jerky gun away. Then discovered trying it on a smoker. I just this minute put just over 5lbs in marinade, I’ll smoke it tomorrow, and it’s all sold already. Will do another batch on Sunday.

    I've done Pork Fatties with Maple --- OMG. Just about anything you smoke turns out great. Use Jimmy Dean breakfast sausage.
    You just have to learn to take it easy when eating ...
