Had a check engine light went to the dealer and they told me a rodent chewed through camshaft sensor wire. They want to replace to engine harness and total cost is 5k. Anyone have any recommendations for me?

It's less Tacoma and more mod
Depends on where it is chewed, by the connector is no biggie, just replace the connector and the little bit of pigtail, if it is after it enters the shielded portion, well then it is more involved since the shield cannot be broken and the wiring is twisted pair, they wouldn't sell you that individually, they'd only have a whole harness. You could buy the shielded wire and replace it all yourself but it'll be time consuming for a 1st timer.
