    Smoking a 25lbs Prime Brisket tomorrow. I got a event at work on Monday at 4 PM. I'm thinking about starting it at 5 PM the day prior. Y'all think I should start it earlier? My smoker is a set and forget so whenever I smoke a brisket I just run it all night and sleep. I just don't want this one to wake me up in the middle of the night. Usually do briskets around 17lbs so this is new.

    I'd start earlier. You can always let it sit in a cooler but you can't speed up a cook. Good luck, sounds yum!

    I started on an Oklahoma Joe's offset smoker 6 years ago. Ran that baby for years and loved it. Many long nights and hard days.

    About 1.5 years ago bought a pit boss pellet smoker. It has been PERFECT, and I can't believe how much meat I've smoked in the last year. Pellet smokers are a cheat code to smoking.

    Last week picked up a Chargriller Akorn. I've been missing real wood and charcoal taste. This thing did not disappoint in the taste department. Everything tastes better. The akorn is very difficult to maintain temperature. If you overshoot your temp, you are pretty much screwed for at least an hour. Has been a learning experience. For $297 it's worth it to me. Some things I've been smoking on the Akorn:

    22h and she came out perfect. I don't have any photos of it getting cut. Did it for my Promotion so I sliced it all up at once. 24lbs gone in a flash.
