I'm seeing a ton of people offering extremely good deals on the TRD off road shocks as I assume they are upgrading them to aftermarket ones. Does anyone know if TRD Off-Road suspension will fit on a Double-cab short bed leaf spring SR truck?

I'm not sure if the shock bodies are different lengths or something but this would be a nice OEM upgrade for me to do. The current shocks feel "okay" but a high quality set of Bilsteins might improve some of my body roll even if they're more "off road" focused

Technically, shocks are "tuned" to the springs they are intended to be used with. Coil springs and leaf springs probably have different rates, so technically you should be matching them with the appropriate shock.
However, like you said, do they even bolt in? I suppose if they bolted in and the shock travel length matches, it could be tried.

My opinion? Get some Bilstein 5100's made specifically for your truck, if they're available yet.
5100's get great reviews across all truck brands and models. I'd also do the front shocks too, no sense in just changing the rears.

As for body roll, Bilstein 5100 will reduce some body roll as they are more "firm" on small motion changes, but body roll is mostly attributed to the anti roll/sway bar. I just installed 6100 in front and 5160 in back of my not-a-Tacoma truck and it does indeed corner a slight bit more flat.
