Any appliance techs on here? Our Fridge has been iffy (milk spoiling before the best by date, stuff not feeling as cool as it should) so I got some remote thermometers and the fridge was at about 56* F with the setpoint of 36* F.

There was ice buildup on the evaporator, so I defrosted the fridge, evaporator fan was not operating correctly so I replaced it, after that I plugged the fridge back in and the temp trend is concerning.

The freezer cooled to setpoint, the fridge cooled to setpoint as well but it seems every 6-8 hours the temp rises to 56-61 degrees depending on the spike, and then it cools to setpoint again.

Any thoughts on what to check next? GE model number will be in the photos.

I missed the thermistors in the parts diagram that I was going through, ordered 4 and will swap at least the 3 in the fridge and evaluate from there. I also ordered a defrost thermostat just for giggles.

2 doors & the freezer on the bottom right?

I have a similar model, the evaporator would freeze over completely stopping air flow and cooling to the refrigerator compartment. This always seemed to happen about 11 pm on a work night, I would have to take the freezer apart and melt the ice with a hair dryer.

See that wimpy white foam strip in the photo below? That is the problem.

That is what is supposed to seal the evaporator coil to the thin metal panel at the back of the freezer compartment - it doesn't. The air can flow around the evaporator allowing it to freeze up.

I replaced the foam with some heavy black self stick foam probably 3/4" wide, perhaps 2 strips of it.

Any hardware store should have something that will work, mine has been trouble free for several years now.

Yep, 2 doors up top and freezer drawer on bottom, I'll pull the freezer apart and check and see if it's similar design, I have a coil in the bottom of the fridge and another coil in the freezer, I don't believe I have the damper/passthrough assembly in this fridge.

Condenser is filthy. That’s where you release the heat or not.
Clean condenser, and note there’s probably a defrost timer, affecting temperature , at certain times.see manual

Cleaned the condenser last weekend and no change, temp sensors came in and I got them swapped yesterday evening, I was a bit concerned yesterday evening watching the spikes as it cooled from the high temp of switching parts, but it seems to have stabilized.

I don’t have enough data to confirm 100% but I believe the temperature sensors have fixed the issues.

This is the pattern it had earlier this week.

Yesterday into the evening, the spikes are different but I didn’t like I was still getting high temp alarms.

And then today, from about midnight to 7 PM central time.

If you have to much frost build up and it never defrost. There are 3 components Timer,Defrost Heater Element and a Defrost Termination Switch(AKA Bi-metal Klixon with certain temp cut in and cut out degrees ) Look at a wiring diagram usually in a packet or check online with model number.
