So I recently changed out my spark plugs for new ones and my distance to empty went from 298 on a full tank to 407 on a full tank. Seems odd. I knew it was gonna help out mpg but seems kinda extreme. Should I worry?

You should be good, just a happy truck. It will slowly lower back down closer to 300 with each fill up.

I've never paid attention to the DTE number because it's just a guess. I pay more attention to how many miles I have on the tank and where the gauge is.

This is normal. DTE value is a part of Combination meter control unit. The value gets reset if the battery was disconnected or a low voltage event happened. After a tank or 2 you will drop to 385, then back to your normal readings

My truck is around 330 miles most of the time. I've seen it around 370 a couple times.

On a average I get 18.5 MPG so I could care less what the thing says.

I know when the Zero range comes on I have 10% of the tank left...SO take the miles traveled and divide by 10 and that's how far you can go....

i.e. ZERO range left pops up and I've driven 380 miles, I have 38 miles left until desperation.

IIRC - Your DTE is a calculation derived from your Avg MPG over the last 200 miles and remaining gallons in the tank. If you unhooked your battery during the process, you might have reset the last 200 mile MPG count (volatile memory requires power) and now it has no reference point so it fills in some absurd number like 30MPG because that's the max on the dash or something. Or without 200 miles to use, it uses what you are currently getting post change.

If we use the full capacity of 21.1 gallons (i swear I've put like 23.5 in before) and divide it by the 407 DTE you are reporting we can see if that's true.
407/21.1 = 19.28 MPG. If your tank is full, that's well within spec and scope for what this truck is rated for.

Assuming TRD-Off Road Double Cab Auto Trans. The capacity is the same on almost all others but the MPG changes with smaller cabs, etc.

I wouldn't worry about it. 400ish is pretty standard for US fuel capacity sizes. IMHO, it should be 500 to 600 miles at the rated economy. That means that a Tacoma would need a 27ish gallon tank. That adds 44 lbs to the truck and that requires an extra horse or two of horsepower. Now you get into all of the engine science that is well above my pay grade.
