    Also, we were just in Philly a couple weeks ago!

    Ended up there for South Street Live on accident. Early in the day, though, before the shenanigans got fun.

    Yeah they're string cheese. Not sure if it was the brand I got, but it seemed rubbery. I smoked 2 different brands, have only eaten the one brand so far. Around a 1.5 hrs smoke. One brand was from acme one from Aldi. I think I tried the Aldi one. The rest in the picture got 3 hours. I used a tray of ice above the smoke tube. It all melted and I now have smoked ice cubes.

    I try to stay away from Philly. Especially the South Street area :rofl:

    We go for 3 days per year, it's fine. I was not a fan last year, this year it redeemed itself.
    It was a blast for us, street was closed, we went during the old people hours not the youngin's party hours.
    Manayunk was cool too, but we liked it last year so that was not something that needed to redeem.



    But about the cheese - that's why I smoke in September/October, with a smoke tube. I wait until it stays below 80-90 in the smoker with the tube going. In the summer it gets too hot just existing. Might be able to pull it off this time of year still, but I don't eat a lot of cheese so I'd end up with 10 lbs of cheese in my freezer until the fall/holidays anyway. I got rid of my offset, but recovered a neighbors gas grill, so I might be able to do it right again!

    But you just made liquid smoke - that's all that is. Bottle it up and use it in the crock pot :D

    3 hours is plenty for bricks that size. I typically get a moderately decent cheese to smoke, since the smoke is the effort that's worth paying for. Cheapo processed string cheese is probably a bit below that grade that takes smoke as good, or is even good to start with. I've never done it myself, but I am 100% going to throw some in next time thanks for the inspiration!

    I like Rise Against, but honestly - if I find him doing acoustic shows anywhere ever again, I am 100% going to go.

    Edit - They're playing in Mansfield MA in September. They're calling it the rise of the roach tour, they're playing with Papa Roach.......... I have to find out the details, if Papa Roach is headlining, I will 100% go for Underoath and Rise Against, stick around for 2-3 Papa Roach songs and then bail. If I have to sit through Papa Roach to watch Rise Against..... :puke:
