    Potatos with Meat Church Holy Cow and homemade Sriracha mayo.
    Asparagus and grape tomatoes with olive oil, garlic p, salt, pepper, and grated parmesan.
    Tri-tip with Holy Chow and Holy Gospel. Pulled the meat at 132° and it rested to 139°. Alittle more done than wanted but still very good.

    Baked potatoes done on the smoker alongside this. Useful in that it cooked them without making extra heat. Useless in that there was no gain from smoking them (didn't expect much, to also be fair to the potatoes). Would smoke them again if it means the same thing if not creating another heat source to cook them.

    Did they at least come out with a somewhat crispy skin?

    We went a BBQ place in NC by our cabin this weekend. They had these diced campfire potatoes done on the smoker with onions, peppers and LOTS of cheese on them. They were pretty darn good. Will be making some myself soon lol.

    The potatoes? They did! I would do it again if there's open space on the smoker and i need to cook potatoes, otherwise I typically just do them in the instant pot in bulk. About 30 minutes, whole bag of potatoes, doesn't heat up the whole kitchen to do them in the oven that way. I don't care about a crispy skin though.

    I don't have to have it but sometimes I want a little chew on the skin when I eat a baked potato. We tend to do loaded taters with either pulled pork, chopped brisket or bbq chopped chicken.

    I was going to try it on smoker when I did the steaks for Mothers Day but it was a rainy day and I got the smoker out too late. Will do it the next time I'm smoking though (which I hope is this weekend).

    I also want to do some smashed taters on the BlackStone again soon. :)
