I know these questions get asked all the time. But, after reading through other peoples builds and googling I think this is what I want to go with. Can someone double check me? I'm not very knowledgable with suspension.

Gen 2 tacoma. After bed topper and RTT plus gear and aftermarket stuff it's about 800+lbs extra weight (mostly in the bed). right now it has 31inch tires and I'd like to go to 33". I'm looking for a 2.5-3" lift. Can I get rid of the drivers side lean too?
So with all of that, I'm looking at the following.

    Bilstein 6112
    SPC UCAs
    Diff Drop??
OME Dakar Lef pack - heavy duty
    Bilstein 5160 Rear Shocks

Will this all get me up to a 3" lift and handle the added weight? thoughts?

I haven't personally used the OME Dakar leaf packs, but there have been some reports on them having issues such as sagging over time and creaking. I'd suggest do a search on those yourself before you buy.
I have the Icon RXT leafs and am happy with them (I run Option 1, but Option 3 sounds like what you'd want for yours). Dobinsons leafs are another that seem to have good reviews.

2" is the max lift you really want to have on the suspension unless you also put a complete drop-down bracket kit on it (simple diff-drops alone are more of a band-aid fix since it doesn't address the control arm & steering (tie rod) angles, and also steals away some precious ground clearance). Some have pushed their lifts up to 2.5" and not had a problem, but 3" is almost certain to cause issues after 10 or 20K miles (and will noticeably degrade ride quality).

Taco lean can be compensated for by simply setting the driver side 6112 a clip or two higher.

I agree with @4x4junkie. I have had OME Dakars... Just don't. They are crap. I would argue the worst leafs out there for a Tacoma. If they were half the price I could maybe see a place for them in the market but there are much better options around the same price range. Icon RXT being one of them. But with 800lbs constant weight you should really be looking at Deaver or Archive leafs. And honestly give a good look into Hammer Hangers. They will do more for ride quality than any leafs you can buy. Especially with that weight.

I have also gone up to 3" lift but regretted and lowered back down to 2.5". Just a really shitty ride even with custom tuned shocks. The increased driveline angles and lack of down travel really add up to a not very pleasant ride. 2.5" is what I would consider max on these trucks. And maybe 2" if you are doing more gnarly offroading where you want more downtravel for traction.

The rest of your list sounds like a solid setup. I would also get new bumpstops and maybe a u-bolt flip kit. Accutune, Archive, or Timbren for those.
