    I dabble with a pellet unit, by no means an expert but I really enjoy it! It’s well worth the effort and learning curve is not that steep with pellets.

    Get yourself some Bluetooth probes so you can keep an eye on what’s going on in there on your phone. It takes some planning and prep work and then just let it do its thing and make sure you are keeping the temp where you need it.

    Like everything there are tons of YouTube videos to find recipes and dial in the technique. Beef ribs are my favorite :drool:

    A basic smoker (I'm talking 55 gallon drum, modified) is exactly what my FIL used a lot.

    Fortunately I got a lot of good advice from my FIL, but he never used any probes or any fancy stuff :rofl:

    I'll try to stick to very basic stuff like a thermometer attached to the lid and that's it?

    I've been back and forth on getting a small grill or small smoker - choices :annoyed:

    Thats fair, drinking a beer and hawking over it is part of the enjoyment for a lot of people.

    I started with a hand me down unit that had pretty inconsistent heat so first few attempts were a chore and did not turn out great… I got this probe for ~$40 on sale (looks similarly priced with all the coupons right now) and it was a game changer. Can monitor the temp of the meat and temp in the smoker simultaneously, and don’t have to open it and let the heat out to check the meat. Highly recommended if you want to try to get other shit done while having something running in the smoker at the same time.

    More room for the kiddo to just do his own thing, plus I want to have ample room left over for patio furniture

    Granted it's just us 3, I like room :rofl:

    Being out at the grill drinking is the one time where the weather doesn't really phase me at all

    But yeah I can't see anything wrong with that setup; I should've mentioned he used probes too where the temp gauge sits outside the grill

    I just find myself wanting to grill more than smoke but man, smoked ribs, etc sound good AF right now

    Yeah I would, they’re the only gussets ive seen that reinforce the ubj ring from shearing in half. All the other options prevent the whole spindle arm from bending, but only those from Snowbound seem like they’d prevent the type of failure we dealt with on Andrew’s 4runner on the last Crown King trip.
    Especially with how much work it is to get the spindles out and ready to weld, might as well go all the way with the best/overkill option
    Wheel backspacing is something to pay attention to with them though

    I was really glad to have help with those from a more experienced welder though, I had Quinton/milota95 do them. They don’t just like ‘lock’ right into place for easy welding, and there’s no place to just throw a 90d magnet on them, so the experience of knowing how to get it all square was pretty invaluable. I spent a couple house just screwing around tacking/cutting and tacking/cutting trying to get them nice and square myself beforehand. Once he got them he had it done in a few minutes lmao
