    Smoked a little ham on Sunday. Mixed it with some scalloped taters and canned peas.

    Tonight I'm smoking a small 2lb pork loin. When it's done it'll go into a crock pot with salsa and chillies for a pulled pork taco.

    I only smoked the pork to 145. Like 2 or 2.5 hours. Then sliced it and threw it in the crock with a jar of salsa, some canned chillies, and a bit of salt and pecker. Shredded with forks after another 2 hours.

    Leftover bell peps, beans, and Spanish rice, and some fresh shredded cheese and a dollop of sour cream. Absolutely delightful.

    I was going to pick up a chuck roast to try smoking it when I was at the market the other day. I'm not into pot roast (the stringy and greasy texture mess with me) so I hadn't looked at prices in a long while. WHEN did they freaking go from a cheap cut to a dang $30 slab?

    Beef in general hasn't come down much since Covid. 9$ a lb at Costco for chuck roast the other day. We have Safeway and Kroger close to us and have to watch for a 4-5$ an lb sale.

    I actually was at Kroger. REALLY surprised me. If I had some people around here I think I would invest in a cow.

    Yeah it's crazy

    We just buy a 1/2 or 1/4 beef. Around $5 pound for everything.

    Smoking is great. Does need some fat though. But trim off the big hunks.

    But I gotcha - I brine, rinse, pelicle smoke THEN make pot roast, goulash, mexi meat, or just BBQ sauce for sammiches.

    Chuck has been $7 at Sam's for quite a while.
    I never see it below $5 when there's a deep sale at the regular grocery store.

    Someone else said it but you might be able to get a quarter cow. Ends up with more ground than I would typically go for. I'm not a huge red meat guy so I'm not really that dedicated to it, I get the discount cuts when I find them, if I end up with a deep/chest freezer I'd consider a quarter cow. Half is just too much. I'm only one person (vegan wife).

    Ya my problem has been all the ground in it. My friend back in MI just did a 1/2 cow, raised at a place local to him (he also has cows but his aren't to the eating point yet lol). He got a pretty good deal, he said he could have got a better deal on the whole cow. If I had still been there I would have split with him.

    The ground is good in my opinion. In fact pretty much anything called round steak I have ground because it’s just better. I wish it was ALL ribeye but…haha yeah we eat a lot more of it in the winter frankly. Basically because we get so much good fish,

    Pork and lamb is good here too

    The only meat we get from the grocery store is chicken and honestly it’s not great. The organic the wife buys is better
