Still learnin' the hot spots and how the oven temp is influenced by the ambient temp (it's been 1000 degrees in TN lately, so that tends to impact things). My favorite pie...pepperoni and mushrooms. PXL_20250727_002357436.jpg PXL_20250727_002446630.jpg

They're so good and they make you see colors.

I would have sautéed them in butter with shallots and finished then with red wine. Then throw those f'rs on the pie

AP flour, 3 day fermented, gas oven straight on the rack. Was a self supporting crisp crust, could probably bump up hydration and oil

    Pesto, roast eggplant, onion, brie

Meanwhile - Blue Mushroom Pizza: make or buy your favorite dough, pizza sauce, mozzarella and Blue / Gorgonzola cheese and your favorite mushrooms. Throw the dough, brush with a little olive oil, toss in oven 425ish, until just about to brown. Pull it, add sauce, mozzarella , shrooms, top with Gorgonzola. Back in the oven til done to your liking. Enjoy!

My wife got her ass absolutely handed to her at work today so I made her a gluten free supreme pizza for supper.

    Then ate the other half.

Depends what you want out of it. I liked stick burning, and I like my pooper. I'm not here to win any contests. I will say, the pellets you use do matter. Some are flavored with oils if I remember correctly, and that's a no no.

The only thing I miss is that I have to do it differently to cold smoke my cheese, and the pooper is a tabletop so it's smaller than my old barrel grill smoker was. I can fit a butt, can't fit a full brisket.

Don't regret getting one, probably will only use poopers for at home smoking from here on out.

I'll also stoke this fire again
This was from this past weekend at Newport Folk Fest
