    They seemed to be better this year. Stuffed with meat. My GFs kids are in the dance troupe so I went Friday and Saturday. The food line Friday was half a block down the street at 6pm. No thanks.

    Ground up fresh shrimp, diced Andouille Sausage, Crawfish Tails, corn, green onion, cilantro and my homemade Cajun Seasoning all mixed together and spread on tortillas, cooked on indoor electric griddle, then topped with a Caesar Salad mix and a store bought Remoulade Sauce.

    My notes to keep it:
    1. Doesn't have to be tortellini. Might make this with gnocchi next time
    2. Provolone is a necessity
    3. I winged it with cream and provolone amounts because I did sliced cheese, all I could find at the store last night. Less is more. I used sausage tortellini, but if you're using cheese, it would be too cheesy
    4. Add mushrooms
    5. COULD be done with ground, but prefer shaved - aim for fresh next time, I used frozen this time because convenience.

    Do recommend.
