    1. Vito and Nick's - Chicago, IL Home | Vito & Nick's Pizzeria Chicago Score: 9 shakas / 10 Notes: Good Ol Fashions, good atmosphere, amazing garlic bread. It's not only about deep dish in Chicago.

    2. Zaffiro's - East Side - Milwaukee, WI zaffiro's pizza Score: 8.7 shakas / 10 Notes: Legendary, good atmosphere, old school vibe, warm vibe. Very good lasagna and other menu items. Walkable to the Nomad Pub which is a must visit.

    3. The Nona Slice House - Safety Harbor, FL https://www.thenonaslicehouse.com/ Score: 8.5 shakas / 10 Notes: Great indoor outdoor vibe. Hidden gem. Puts Florida on the map.


    Non Bar Pie -

    1. Buddy's - Detroit, Michigan Score: 9 shakas / 10 Notes: Crust is insane - buttery, crispy edges, burnt edges. Soft doughy goodness in the middle but not doughy tasting.

    TBD: John's of Bleecker - NYC , Sally's, Pepe's - New Haven CT

    These will certainly factor into the top 5 at some point so this order is not static.

    No picture, but Stoners Pizza Joint in Fort Worth (2401 W 7th Street) was surprisingly good last week. Ordered the chicken bacon ranch specialty pizza for something different.

    (The name of the place originated from the pizza stone used to cook it not the plant.)

    What do you guys do for homemade pizza sauces?

    Here's the one I used on the most recent pies, pretty simple:

    Tomatoes:
    • 1 x 8oz can Tomato sauce
    • 1 x 28 oz can crushed tomatoes
    Sauté ingredients:
    • 1-2 tblsp butter
    • 1/4 large onion, minced or shaved (your preference)
    • 1-3 fresh cloves of minced garlic (your preference)
    • 1/4 cup sherry cooking wine (your preference)
    • Seasonings:
      • 1 1/4 teaspoon salt
      • 2 teaspoons dried oregano
      • 1/8 teaspoon pepper

    Instructions:
    1) On low heat, add both the canned and crushed tomatoes to a large/medium sized sauce pan or dutch oven.
    2) On medium/medium-high heat, sauté onions in your favorite pan with 1-2 tablespoon of butter until softened, about 3 minutes??
    3) Add garlic, 30-45 more second until the garlic is fragrant
    4) On high heat, add the seasoning mix (salt, oregano, pepper) and flash the spices for 30-45 seconds.
    5) Reduce heat to low/ medium low, add 1/4 cup sherry cooking wine to cool down.
    6) Bring to a simmer and allow the wine to cook off.
    7) At low to medium heat, add the onion/seasoning/wine mix to the pre-heated tomatoes in your sauce pan or dutch oven. Let simmer for 15-20 minutes.
    8) Apply to pizza as desired.

    This recipe had more than enough for a ladle and a half of sauce on two 12" pizzas, and I still have at least another cup of extra sauce.
