I'm looking to run a 12v outlet in the bed that's idiot proof and can't drain the battery. So while it's simply to run a line right off the battery and do a fuse and switch, I'd really prefer to run it where it the outlet is hot only when the truck is running. Any advice?

You are 90% there. Run the wires like you said but instead of straight from the battery to the outlet, put a relay shortly after the battery and then tap the IGN1 fuse to the relay. Ground it anywhere in the engine compartment and ground the outlet to the frame. Only need to run one wire to the bed and you can daisy chain a couple outlets if you wish.
