Nobody is going to touch making mats that come anywhere near the gas pedal since the issue with the factory mats got Toyota into so much trouble over the last several years.

..... if that is the case, then so can the carpet itself. There is no reason you can't make a proper protective rubber mat that fits up in there. Up the side it doesn't need to be thick enough to interfere with anything, and you could even glue velcro onto the back of it to really stick it to the carpet.

In any case, I've ordered a set and WILL DEFINITELY be extending it to protect up around the pedals.

Have you looked at Husky Liners? My set goes under the clutch pedal with no interference.
