Both are for a 3" suspension lift.

My guess is under $1200 = OME nitro 9000 shocks and 885 coils front and Dakar leaf pack with OME shocks in rear

Under $600 = Bilstein 5100 with Eibach coils, with an AAL and Bilstein rear

What do you think is the best? I would like to do a lift soon and am considering my options.

I cant compare the 2 since I personally havent had them on my truck but last year we installed the Eibach/5100's kit on my buddies 2006 DCLB and hes loved that lift ever since and hasnt ever had any issues with it and his truck rides pretty smooth.

That is the direction I am leaning.

5100's from Downsouth for $309 and AAL and Eibach from Toyotec $267 shipped.Thinking that is the best price for Bilstein 5100 with Eibach coils, with an AAL and Bilstein rear.

Not sure if I should mix it up and do an OME 885 instead of Eibach coils, and is it better to set the 5100's at .85" or do a spacer on top?

If your talking about getting 885 coils with 5100's and setting them at 0" height with top plate spacer....thats the exact lift I have up front and I love my setup as well. Mines been on my truck since 2009 and its been a great lift ever since! Now for the rears I have AAL's with Icon reservoir shocks I won in a giveaway but thats a whole other story haha. You might also want to look into getting aftermarket UCA's for proper alignment.
