It is time to start looking for new tires. So, I have 265x75r16 Duratracs that I put on the stock suspension. However, I have added Spidertrax spacers, the rear spring tsb, & bilstein 5100s set at 1.75 front & rear. If 265x75r16 is the largest tire that fits stock, what is the largest or tallest that I can fit now? Do I have enough clearance for 255x85r16? It seems that most run a 3" lift to fit those.

Suspension travel does not change with the Bilsteins set to 1.75", only ride height. You can run 255/85R16 tires at stock ride height, some trimming and/or wheel spacers maybe required. Ultimately, when the tires stuff with the factory bump stops, it's all the same no matter what suspension you are using.

Well, I am not worried about stuffing the wheels as far as possible. The largest rock I have seen around NOLA was imported to be part of a Wendy's garden.

I am mostly concerned about rubbing while turning. My current tires rubbed some on the mud flaps until I took them off. But, it looked like the open space increased when I added the 5100s.

Adjusting caster will help with clearance at the rear of the fender well. 2 degrees is usually just right. The most caster, the less clearance there. Below 1.5 degrees and you may have tracking issues at higher speeds.
