01 V6 Auto stalling out when the engine is hot- please help trouble shoot!

    Current Modifications Exterior: aFe Stage II intake, Gibson cat back exhaust, Eagle 197 18" wheels, Toyo Open Country AT 32" tires, Bilstein adjustable 5100 (front), 5100 (rear), OME 881 springs, Wheeler's 5 leaf pack, Wheeler's braided SS brake lines, EBC Sports Roters and Green 7000 brake pads, Westin bull bar, PIAA ATP 520 lights.     Hey all,
    I have a 2001 v6 automatic with 140k on it, and recently I have been noticing that if I start the truck, get it warm and stop it (like to fill up on gas), it will start back up and stall out if I don't give it gas. Sometimes this will happen after I start it, drive off, and let off the gas. The engine cuts out, no code it thrown, and after sitting a minute, it starts up like nothing ever happened. I changed the spark plugs (and measured the gaps), replaced the fuel filter, cleaned the MAF, and installed an Afe intake all this fall. it doesn't happen all the time, but it seems to be happening more frequently. Could this be signs of a bad/clogged fuel injector? Thanks in advance for any help you can throw my way.
