Nice wheels man. I can't really speak to what you can roll with 17" and +1" width, but I have those same factory rims and Cooper Discoverer ATP 265 /70 R16 tires. I get slight rubbing at maximum turning angles, so day-to-day driving, not much rub at all. Side note: you willing to part with/sell any one or more of your stock wheels?

Do you know the specs to the wheels? Going to need to know he offset or backspacing to give you any help with them.

It looks like 4-3/4 back spacing...if I measured that right...I put a straight edge against the rim and measured from the mounting to the straight edge

Wheels will be just fine then, no problem with clearance. I take it the bolt pattern and hub bore are correct?
Tire size would be 265/65-17 to keep to the stock diameter.

Eccracer104 since its a 8" wheel can I go with a wider tire with no issues?

If you don't want to trim your fender well area I'd say no. The wheel being 8" wide you can fit pretty much as large of a tire as you want but you'll run into other problems.
Personally I cut away most of my fender liner because I wanted a bigger tire and you can't tell from 5' away, only once you're up close looking for it is it really noticeable.
If you want to go wider go for it just be aware you may have to trim to avoid rubbing.
