I'm putting in the Dakar full leafs in...what degree shims do I need? Can a 2.5 or 4 work instead of the usual 3?

Both could work, or you may not even need them. Make the centering pin a little longer to prepare for shims, install leafs, see if you have vibes. If so, start with the 2.5 and work your way up.
