Have you plugged in a code reader to see if its throwing any codes?

I would start by cleaning the MAF sensor and the throttle body. Make sure you only use MAF sensor cleaner on the MAF or you could damage it. Also i would check the air filter and make sure thats clean. Is the truck completely stock, or have there been any modifications?

    A thing or two...
How about some actual information, so people can help you with your problem.

Is the problem consistent and repeatable or intermittent?
What RPM/speed/gear does the problem occur?
    Manual or auto?

Does it feel like you're hitting a fuel cut governor or just that the truck just hangs at a certain RPM for a second or two before accelerating again?
Does the truck buck or lurch when this problem occurs?
How many miles on the engine?
Have the spark plugs ever been changed? Is they have, are they gapped properly?
Have you tried running fuel system cleaner?
Does the issue happen when the engine is cold/at temp/both?
Has the MAF ever been cleaned?

Glad you got it sorted. That still sucks though, did you have to drop the tank?
