Is the check engine light on? There are some conditions where the ECU won't let the trans shift into 5th, when it senses a problem. Mouse chewed knock sensor wiring is 1 of those conditions.

Another possibility. Have you recently done an oil change? If so, you drained the transmission and overfilled the engine.

That's pretty vague. After you poured in ~5 quarts of engine oil, did you check the level with the dipstick? If the problem started right after you did the oil change, you drained the transmission. If you did, it's OK to admit your mistake. Plenty of people have done it.

OK, just making sure. Like I mentioned, plenty of people have done it. That's all I've got for you. Hope you get it figured out.

Nope. Even if the engine was overfull, it's unrelated to the trans shifting.

    But is the trans full?

you said "tranny fluid changed" ...like power flushed or drain n fill? IOW you're having problems with a tranny that was just worked on 15k miles ago, just sayin

V6 with the 5 speed auto (A750F) is roughly just over 2k rpm at 70 mph on the interstate. If that helps

When the torque converter unlocks it's 2500 rpm in OD, and 4th gear is about 3k

Nope. Just hurting MPG. Motor doesn't care.
