Did the drivers side head gasket on my '05 last summer.... other than having to pull the engine it's really not that bad. Granted I have a lift, but had the engine out in about 5 hours. Got the head shaved & cleaned, Toyota gaskets & water pump, serp belt, was out less than $500 over a couple days downtime. The socket is easy to get online for less than $20. Have to pull the motor to properly seal the timing cover IMO. Dealer here wanted $2250 to do it, or a salvage motor for around that same price.

You need to consult with a different independent mechanic. The one you are working with is not up to the task. It's obvious he doesn't want to do the work.
In all fairness to him, he may run a small shop with limited help. This could tie him up for longer than he likes.

Swapping in a different engine could put you right back where you are or worse. Whatever you end up doing, your wallet is going to take a hit. There is no cheap way out of this UNLESS you really do not have a faulty head gasket to begin with. Hold on to your money until someone with skills has confirmed this is the case.
