Ok so I bought this OEM 50/50 pink at Canadian Tire and filled up the reservoir tank to the full line. I did not fill the actual rad though, just the reservoir.
I used my truck for the day and this morning I checked the level and it's down to the same level as before, like way below the Low level line.
I havent turned on the cab heat though. Should I assume I have a leak?

I wouldn't assume anything yet. It could have just gotten air in the system from running the thing low on coolant.
Top it off again and give it a day or two then top it off again. If you continue having to top it off after several tries you most likely have a leak somewhere.

Turning on the heater doesn't matter as the coolant cycles through the heater core all the time regardless of if it is on or not.

If you really want to know now, you can get a free loan a tool at most auto chains to pump the cooling system up to pressure (thru rad cap) and see if you have a leak.
Or do as Jimmyh said and wait and see.

When the engine is cool, pop off the radiator cap and make sure the radiator is full to the top with coolant. After that, top off the reservoir.
