I've heard of a lot of people having issues with aftermarket E fans not cooling as good as the factory fan. A fan shroud will always help and a manual switch is mandatory IMO. How big is your Fan?? when I do an E fan im going to run a 17" flex-a-lite (I had one on my 94 and it kicked ass) with an custom aluminum shroud/mount

The fan shroud is pretty important. The fan shroud helps the fan pull air through all of the radiator. Without it, the fan can just pull air from behind the radiator rather than through the radiator.

One of the issues I see with the 2nd gen flex-a-lite fan is that the shroud doesn't cover the whole radiator. Technically the stock fan has a higher CFM than the E-fan, but that's only when your RPM is high so it probably evens out.

manual switch and worst case you just stop a lot and let it cool.

so if i set up a manual switch, it should turn on by itself also if it gets hot enough right??

    Depends on how it's wired.

I'm going to have a On-Off-On SPDT switch to control the Fan Relay ground

Switch Down is tied to the temp sensor which provides ground at specified temps (195° ON-175° OFF)

Switch Up is straight to ground

Center Terminal is to the Relay Coil (other side of Coil has power)

Switch in center position is OFF, such as deep water crossings

per http://www.rondavisradiators.com/Spal%20fan%20wiring%20instructions.pdf you can have a switch that provides ground

A Shroud will make a big difference. Reading thru Griffin and Pirate Tech, best case without a shroud is the fan pulls air thru the radiator only within the Area covered by the fan; which is less than half the radiator surface area. But a shroud will pull the entire surface area.
