I have a 2017 SR5 and I'd like to figure out how to get Android Auto/Apple Car Play on my head unit. Head unit is stock and obviously doesn't have it. Per my research, it looks like there's this "Crux" unit that gets installed behind the existing head unit, but it's like $700 and you still need to connect your phone via a USB cord. Is there a decent head unit I can upgrade to that will retain the existing head unit/vehicle connection features (steering wheel controls, etc.) and allow for Bluetooth Android Auto? Looking to spend $500 or less to do this.

Lots of options. Crutchfield has some plug and play stuff. Many on here have used Joying's android radios. Some have chanced on no name android radios and seem pretty happy.

Joying HU is in your price range and have all those features.
This one SKU: JY-UQ139N4G-H will fit SR5 bezel. It doesn't have a volume knob.
With the knob, you would need to upgrade the bezel($$$) to TRD trims or cut.

Does the volume control on the steering wheel still work with this?

I just upgraded the wife's '19 Highlander head unit for the same reason. $1025 installed though, there were quite a few adapters/wiring harness to retain cameras, steering wheel controls, charging/USB ports, and the beauty ring to make it all look flush. There were options that no longer require USB for carplay, but using a combo of BT and wireless makes your phone basically not have internet access since you are connected to the car. I HATED that in the X3.
