I really want to rid my 2021 of this snitch. Anyone know where it is located?

As seen, a castration is not a good idea. But, download the owners manuals and read up on the Connected Services Opt Out options. It is said that they are convoluted, but you can stop the monitoring. Wirelessly, at least. The same info is stored and can be read through the OBD connection, but that is a much more rare situation.

For example, from my pre-Connected Services OM:

I attempted to ask Corporate about this, but they were hopelessly confused with the 2020+ Connected Services Tacos.
