    Had a chance to do some testing this weekend, and you're correct. The shift points don't change when you select S mode, but it does prevent the engine from shifting about the number selected.

    So simply moving the selector to S, then up to S8, does seem the easiest way to keep the ICE running while not otherwise affecting the truck's usual behavior.
