While we are on the subject, what tire pressure do you guys run on these tires? Higher/lower/same as OEM on the door jamb plate?

Depends on the tire. Do the chalk test. It will tell you what you should run.

Are spacers with 265/75's on an otherwise stock truck simply for looks? Or is there a functional reason for them?

The only function that I can think of is for chain clearance as in winter chains for ice and snow, as the uca is very close to the tire. They change the turning radius and cause cupping unless you drive in a straight line all the time, and no advantage off road. Oh they do cause tire rub on the top lip of the fender flares under full compression too, but I have the sway bar removed.

Will tires (265/75/16) rub at all with 1.25" Spacer on leveled (1.5" front only) 2007 SR5?

265/70/r16 with 1.25 inch spacers, little rubbing on the drivers side at 3/4 left turn while going uphill. Mud flaps deleted*
