Two things:

1. Most folks, when they sell any vehicle, fill out and return to the DMV the "Sellers Release of Liability" that'll have your name and address on it. So the car can be traced back to you even if you don't register it.

But more importantly -

2. As others on the thread have said, I don't think you're gonna have nearly as much fun driving in the desert with a 500 dollar wreck as you think you are. I think you're gonna drive it about two minutes, max-wheelspin all the way, and get the thing stuck. Then spend an hour digging it out. Then a three minute ride. Then another hour digging. Etc...

Stuck cars are a pain in the ass and not much fun.

 

Exactly. In my line of work documentation is everything. If you did not document it, it did not happen. The converse is also true. If you document it, you cannot go back later and say that is not what you did. Don't be douchebag.
